ProX is a Real World Learning initiative providing summer professional experiences for high school students.

About

Heirloom Brand’s mission is to lead a return to wholesome foods that are deeply flavorful & transcendently better for consumers, farmers & the earth. The company currently produces premium food products from minimally processed whole grains, such as flour, through their recently acquired brand: Farmer Direct Foods.

Problem

Our team sought to develop a high-end, gluten-friendly product so that gluten-sensitive consumers can enjoy chocolate chip cookies without compromising their health and wellness.

Solution

Our solution is a gluten-friendly chocolate chip cookie made from heirloom buckwheat. Heirloom grains, which come from plants that have been carefully grown from the exact same seed line for hundreds of years without genetic modification, are highly regarded in terms of both nutritional value and flavor, offering consumers an enjoyable treat that fits within a healthy diet. We aim to ensure that all of our ingredients are high quality with minimal processing in order to mitigate any digestive issues gluten-sensitive consumers often experience (gluten isn't the only culprit!).

Audience | Target Market

18 million people in the US are sensitive to gluten and about 30% of Americans deliberately avoid gluten in their diets. Additionally, our product will be targeted towards Millennials and Gen Z, who are the primary avoiders of gluten.

Learning Outcomes  |  Community Impact

Our gluten friendly chocolate chip cookies allow gluten-sensitive consumers to indulge in one of their favorite foods without worrying about compromising their health.

Next Steps

The next step for Heirloom Brands is to begin working with sourcing partners to develop a nutritious and flavorful buckwheat chocolate chip cookie, before preparing to release the product and reaching out to influencers for potential partnerships.

This experience has developed our team's self-management and organizational skills as most of the work took place through virtual meetings we scheduled among ourselves. Additionally, we learned to conduct market research and ideate creative solutions to the problem presented by our employer.
